SWEET BASIL AND SHRIMP SALAD WITH RICE

INGREDIENTS:
1 pound medium shrimp, peeled and deveined
1/2 cup Herb-Infused Olive Oil
1 clove garlic, minced
1 four-ounce jar of Sweet Basil Pesto
1 Tbsp fresh lemon juice
Freshly ground pepper
1-1/2 cups cooked rice, cooled
radicchio cup or leaf lettuce

DIRECTIONS: Combine the olive oil, garlic, sweet basil pesto, and lemon juice and blend well. Add pepper to taste. Set aside.

Cook the shrimp in boiled, salted water until they just turn pink (about 3 minutes). Drain and cool. Cut shrimp into halves lengthwise.

In a large bowl, combine the shrimp, dressing, and rice. Mix thoroughly. Add additional lemon juice to taste if needed. Spoon portions of the salad into individual radicchio cups or serve on the lettuce leaf on individual plates.
