A PARTICULARLY PLEASANT PESTO SALAD

INGREDIENTS:
1 lb. rotini (spirals) pasta, cooked and drained
1 medium size sweet red or green pepper, chopped
1 large ripe tomato, cut into bite-size pieces
1/2 cup All-Natural Pesto (any variety)
3 T vinegar
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp finely chopped or crushed garlic
1/4 cup finely grated parmesan or romano cheese
2 Tbsp finely chopped shallots or onion

DIRECTIONS: Combine all ingredients and chill for 2 hours.

YIELD IS APPROXIMATENLY 2 LBS.
