CHILLED CUCUMBER PESTO SOUP

INGREDIENTS:
2 cups peeled, seeded, and diced cucumber
1/2 cup Sweet Basil or Lemon Basil Pesto
1-1/2 cups plain yogurt
1/2 cup sour cream
2 Tbsp rice or white vinegar
1/4 tsp salt (approx.)
Pepper (white or black)
Fresh basil or parsley
1 small garlic clove, crushed (optional)

DIRECTIONS: Combine all ingredients except the pepper. Blend until smooth, taste, add pepper, and adjust seasoning. Serve very cold, garnished with fresh basil or parsley.
