CHICKPEAS WITH PESTO

INGREDIENTS:
2 cups canned chick peas, rinsed
2 cloves garlic, crushed
1/4 cup Herb-Infused Olive Oil
2 Tbsp softened Sweet Basil Pesto
1/4 cup freshly grated Parmesan cheese
1/4 cup thinly-sliced roasted red peppers
1/4 cup diced carrots
salt and freshly ground pepper to taste

DIRECTIONS: Combine all ingredients in a mixing bowl, toss well. Chill for about 1 hour. Garnish with Italian flat-leaf parsley and black olives.
